Chickweed (Stellaria media) Chickweed loves to spread its way through planted vegetable beds and seems to have an affinity for the warm moist climate of a hoop house.
It is super tasty and one of the easiest wild plants to incorporate into your diet. Not only does it taste good but it also contains a bounty of nutrients: flavonoids, triterpenoid saponins, phytosterols, coumarins, mucilage, vitamins (A, B6, B12, C, D, folic acid), minerals (calcium, copper, iron, magnesium, phosphorus potassium, zinc), rutin. The tender tops taste of corn silks and make an excellent salad green. Chickweed is also fantastic wilted; since it is so tender it's best to wilt by adding to hot foods just before serving.
