Henbit (Lamium amplexicaule) One of the most beautiful and understated plants of spring. To maintain the glory of the flowering tops, add them into salad and dress well with oil and vinegar. Although it might seem a shame to cook this stunning plant, it can be made into a delicious dish simply sauteed with onion and garlic. Try cooking onion and garlic in a little oil until soft and slightly brown, then stir in a large handful of henbit and cook gently until it wilts a little. Add a splash of apple cider vinegar to serve.
