Ivy Leaved Toadflax (Cymbalaria muralis) A bitter and very delicate herb. This one certainly needs to be used raw since it is very fragile and cooking it turns it slimey in an instant. It carries a unique bitter flavor and rubbery texture. The bitterness can be used to stimulate appetite or as a digestive to promote the flow of bile at the end of a rich meal.
If you make bitters, this would be an excellent herb to add to to the mix for added complexity.
