Maple (Acer spp.) Surely everyone knows at least some maples. They produce such wonderfully flavored sap which has been widely utilised and used to produce a most delicious syrup. The flowers are another delicious part of the maple. Caught at the right time, they are sweet beyond belief (they actually have an effect on me whereby the sweetness remains in my mouth for the whole day after eating them). The most attractive of the maple flowers probably comes from the Norway Maple* (Acer platanoides), they have an explosive cluster of bright yellow flowers which hold their form well, even when stored in the fridge for a few days.
A classic use is to tempura batter them and serve with a light dipping sauce. Make the most of their sweetness by adding them to salads or using them to decorate cocktails.
