Ox Eye Daisy (Leucanthemum vulgare) These classic daisy flowers are a sure sign that summer has begun.
They are an incredible versatile flower with a mild herby flavor that pairs well with sweet or savory dishes. They can also be picked apart (or left whole) and mixed into any cooked or raw dish and can replace parsley wherever it is called for. They are a welcome addition to any salad, can be used to add depth to a stew, or can be loving placed on a dessert.
The flowers are fantastic dipped and fired in a tempura batter.
Marinated and served whole, they make an excellent side vegetable.
