Perennial Puha (Sonchus arvensis) Puha or Rauriki is a green vegetable native to New Zealand. Traditionally it was one of the staple green vegetables of the Maori and is still eaten today. A versatile food with a similar flavour to lettuce, the sow thistles come in various forms and textures. All of them are excellent cooked greens. Perennial Puha is the most tender of all and is especially good raw, use small leaves whole or chop larger leaves, eat them raw or wilted.
