Culinary notes: The leaves are similar in flavor to dandelion and can be used cooked, to lessen the bitterness, or eaten raw.. Traditionally it is served with fatty meats and chilies, olive oil. and salt, or cheese. to balance out the bitterness. The flowers are slightly bitter and an absolutely stunning color. They make a great garnish to any sweet or savory dish.
