Eastern Hemlock (Tsuga canadensis) The unripe (green) cones of Eastern Hemlock are tender and sweet with all the delicious aromas of pines. You can see the new pine cones of this year in the foreground of the above picture, with the mature cones in the background. They can be eaten instead of capers, as pickles, or they can be used to impart flavor just like the shoots that were ready for harvest just a few weeks earlier. Native Americans used to dry the sweet, sour cones and pulverize them for use as a spice.
