Harvesting notes: The carrot family contains many very delicious plants and some deadly ones too. Be sure you have identified the plant correctly before consuming.
Culinary notes: The stalks have notes of both celery and carrots. The leaves are aromatic and have a mild celery flavor. Stalks can be used as a vegetable and work will in a mirepoix , while the leaves are best used raw in salads or finely sliced and lightly cooked in soups or stews. Flowers add a lovely herby flavor to any dish and make a beautiful delicate garnish.
