Prickly Sow Thistle (Sonchus asper) Don’t let the prickly appearance of this sow thistle put you off. This plant is related to lettuce and shares many of the same flavors. Stronger than lettuce, this leaf becomes one of the most delicious greens when cooked. Try steaming the roughly chopped leaves for 5-10 minutes and serve with sunflower oil, a little soy sauce and some toasted sesame seeds.
Believe it or not this prickly plant can be enjoyed raw. If the prickles are too much for your lips or mouth, chop finely and mix through a salad in place of lettuce.
Sow thistles are renowned for containing omega fatty acids which offer an alternative source for the same oils found in fish.
