Culinary notes: The aroma of sweet clover, yellow (as pictured above) or white, is a delicious mix of bitter almonds, vanilla and hay. While the pre-flowering top (pictured below) are best for flavoring, the flowers can also be used for either flavoring or as a garnish. Infuse into cream for a sweet and complex vanilla-like ice cream, or before whipping into whipped cream. Infuse it into butter to flavor pasties or infuse into water or vodka to enhance a standard libation. Be mindful of temperature and infusion time because it can become overly bitter if infused at too high a heat or for too long.
